Chicks Love Chocolate® Sweet Potato Casserole
8 to 10 medium to large sweet potatoes
1/2 cup coffee liqueur such as Kahlua ® or chocolate liqueur such as Godiva®
3 Tablespoons cocoa powder
2 sticks butter
1 cup brown sugar, packed
1 small bag mini marshmellows
Directions
Lightly scrub sweet potatoes
Boil potatoes until par-boiled
Heat the liqueur, cocoa, butter, and brown sugar in a heavy saucepan, cooking carefully over medium heat until a bit caramelized.
When potatoes par-boiled and still a little mushy, pour them in a colander to cool so that the skins can be peeled. Peel the skins.
Place (peeled and partially boiled) sweet potatoes in large baking dish, chopped up into 1-inch pieces. Pour sugar mixture over sweet potatoes. Bake approximately 1 hour at 350 degrees Fahrenheit, until cooked through and browning on top. Top with mini marshmellows and return to oven 3-5 minutes until marshmellows lightly browned.
Chicks Love Chocolate® Sauce
1 cup heavy cream
6 squares unsweetened chocolate, broken into pieces
¼ cup sugar
Melt the chocolate in a bowl set above a saucepan of simmering water-don’t let the water touch the bowl or water splash into the bowl! Heat the cream in the microwave about1-2 minutes til hot. Stir the hot cream into the chocolate and mix well. Add the sugar. Serve hot, warm, or at room temp. Makes 1 and ½ cups. This can be used with ice cream, on cakes or in our chocolate martinis!
Chicks Love Chocolate® Martinis
Ice
2 fluid ounces chocolate liqueur
1 1/2 fluid ounces vodka
1 ounce half and half
1 ounce coffee liqueur
Shake mixture well in your martini shaker and add to chilled martini glasses rimmed with cocoa powder! That’s it! To make this look more delicious swirl some chocolate syrup in the martini glass before adding the liqueur mixture! It will look fabulous!
